I'm not a huge fan of t...Great comment BStro... I'm not a huge fan of taking the Glycemic Index at face value. For those of you that are unaware "The glycemic index (GI) is a ranking of carbohydrates on a scale from 0 to 100 according to the extent to which they raise blood sugar levels after eating." I encourage everyone to look at the nutrient density and quality of a food as opposed to just the G.I. You will find that foods high in fat & sugar, like premium ice cream have a G.I of 37, whereas a raw banana usually comes up around 52. Premium ice cream has lots of fat which slows the raise in blood sugar. For healthy individuals, eating a banana is a great snack. For diabetics, I always recommend pairing fruit with a fat and/or protein to slow the raise in blood sugar (e.g: banana w/ PB or yogurt). I would not recommend a diabetic eat premium ice cream over a banana. Think more in terms of nutrients as opposed to the G.I.
